Patra/ Alu Wadi/ Patrode



Patra/ Alu Wadi/ Patrode is a versatile dish that is present in various cuisines, Gujarati, Maharashtrian, and Manglorean respectively. It as amazing snack which has a unique taste. The Gram flour mixture applied between each leaf has a wonderful sweet, tangy and spicy flavor. The texture of this dish is fantastic, soft from the inside, and crispy bits on the outside. The toasted sesame adds an extra texture to whole dish. The tamarind is actually added to this dish to prevent the colocasia leaf's itchy effect on your throat. It happens to add amazing taste to the dish as well.

Patrode, in Manglorean, makes use of rice flour instead of gram flour for this dish. I am yet to try this version but I am sure it will equally amazing.

Ingredients For Patra/ Alu Wadi/ Patrode

  • Colocasia Leaves (taro root leaves)(Arbi leaves) 7-8
  • Gram Flour 2 cups
  • Tamarind paste 2 Tbsp
  • Green chili- Ginger paste 1 tsp
  • Red chili powder 2 tsp
  • Turmeric Powder 1 tsp
  • Coriander powder 1 tsp
  • Sugar 1 tsp
  • Salt to taste
  • Water as required
  • Mustard seeds 1/2 tsp
  • Cumin seeds 1/2 tsp
  • Sesame seeds 1/2 tsp
  • Oil 1 Tbsp

HOW TO MAKE PATRA/ ALU WADI/ PATRODE

  1. Prepare the Gram Flour filling by mixing Gram flour, tamarind paste, green chili-ginger paste, red chili powder,  turmeric powder, coriander powder, sugar, and salt. Mix all these with some water to form a paste. It should be thick enough to ensure easy spreading on the colocasia leaves.
  2. Prepare the Colocasia leaves by removing their veins with the help of a sharp knife. Place the leaf on a clean surface with the light green side facing up. Apply the Gram flour mixture with the help of your fingers evenly on the whole leaf. Place another leaf on top and repeat the process with 2 more leaves.
  3.  Carefully roll the arrangement tightly. Apply more Gram flour mixture on the roll. Place in a steamer. Prepare more such rolls and steam in a steamer for 10-15 minutes.
  4. Check if the Patra is cooked by sliding a knife through the center of each roll. If it comes out clean, it's cooked. Remove from the steamer and allow to cool.
  5. Once cool, cut the roll into thin slices.
  6. In a pan heat some oil, add mustard, cumin, and sesame seeds. Carefully place the cut patra slices and toss till they get a bit crispy.
  7. Garnish with coriander and serve.
