Indian Green Curry (Peanut Aamti)
Indian Green Curry, just a fancy name to a 5 min "aamti" that is best for when you have no vegetables available at hand or want to cook something quick to go with your plain rice or Roti.
The preparation is quite similar to that of Thai green curry but a way simpler version. It tastes so amazing, it will be your quick fix to hassle free cooking in no time. With such less ingredients and not much time to spare, you can make an amazing bowl of curry for yourself. It has a versatile flavour that goes well with both Roti and Rice.
This used to be my mom's special recipe that she prepared everytime I was in no mood of having anything else when I was younger. She just had to say the name and I was ready to have it anytime.

Recipe Notes: Make sure to make a fine paste and add water to thin it down before adding to the tempering.

Ingredients For Indian Green Curry
- Roasted, unsalted peanuts 1 cup
- Garlic cloves 4-5
- Ginger 1/2 inch
- Coriander leaves a handful
- Green chillies 3-4 (depending upon the spice level)
- Oil for tempering
- Cumin seeds 1 tsp
- Asafoetida 1 pinche
- Curry leaves 7-8
- Salt to taste
- Water as required
HOW TO MAKE INDIAN GREEN CURRY
- Grind peanuts, garlic, ginger, coriander, green chillies to a fine paste. Add water to adjust to a thin consistency.
- In a wok, heat oil for tempering. After the oil is hot enough add the cumin seeds, curry leaves and asafoetida.
- Add in the peanut puree carefully and stir constantly. Adjust the consistency with some water if needed. Add salt to taste.
- Boil for 1-2 minutes. Garnish with coriander and serve alongside with Roti or steamed rice.
- Squeeze a few drops of lemon juice to enhance the flavor.
