Chilli Garlic Paratha.

Paratha's are a very famous and well eaten type of flatbread in India. It is made in so many different variations. From plain paratha to filling it with vegetable or meat stuffing, you name it and a Paratha is something that can be made out if it. It is a glorious invention for us Indians as it is such an amazing way of incorporating our "Roti and Sabzi"  into one single dish. 

Mother's all over india like to stuff the prepared vegetables into parathas so that is easier to convince others to have them, because c'mon who can resist a paratha.

Here I have a paratha, which resembles our very own favourite Garlic Bread. The ingredients are almost same, but the cooking technique is way easier and unique in its own way.

Recipe Notes: Make sure to cook the paratha on a high flame. This is to ensure a soft paratha rather than a hard one.

Ingredients For Chilli Garlic Paratha

  • Whole wheat flour 2 cups
  • Garlic cloves 4-5
  • Butter 2 tbsps
  • Black pepper powder 1 tsp
  • Mixed herbs 1 tsp
  • Chilli flakes 1 tsp
  • Chopped coriander
  • Salt to taste
  • Water as required
  • Butter for roasting

HOW TO MAKE 

  • Knead a semisoft dough for your paratha using flour, salt and water. Add some oil, knead to a soft ball and keep aside.
  • Meanwhile prepare the filling. In room temperature butter, add minced garlic, black pepper powder, mixed herbs and chilli flakes. Mix well and keep aside.
  • Divide the dough into equal balls. Not too big, not too small (the size of a medium tomato).

  • Roll out thick. Dust with some plain flour to avoid sticking. Apply the chilli garlic paste evenly on the whole surface.

  • Sprinkle coriander leaves all over.

  • Start pleating the rolled sheet. You should get a fan like shape as shown.

  • Twist to form a pinwheel. Cover with dry flour.

  • Roll out the pinwheel evenly. You'll notice layers formed in the paratha. It's beautiful.

  • Gently lift the rolled paratha with both hands from your working surface and place on a hot tawa or skillet.
  • Flip after 10-15 seconds. Apply some butter to the whole surface. Flip again. Apply some butter. Press and roast. Cook evenly.
  • Chilli Garlic Paratha, ready to rock any cooked vegetable of yours or eaten as it is with some sauce or dip.
